General Tso's Chicken

Chicken thighs 4 pieces
Cornstarch 10g
Ketchup 15g
White sugar 10g
Vinegar 10g
Egg white 1 piece
Green onion 1 piece

How to Make General Tso's Chicken

  1. Prepare the chicken thighs.

  1. Debone and cut into small pieces.

  1. Marinate with salt and egg white for 15 minutes.

  1. Coat each piece of chicken evenly with flour.

  1. Heat oil in a pan to 70% hot, then add the chicken pieces, cooking on medium-low heat.

  1. Once the surface is slightly yellow, remove and fry a second time until crispier.

  1. Start preparing the sauce: mix three parts ketchup, three parts sugar, and one part vinegar.

  1. Heat in the pan.

  1. Add the fried chicken and coat evenly with the sauce.

  1. Sprinkle a small amount of chopped green onion before serving.
