Simple Method for Braised Pork, Not Taught by My Wife, Sharing the Recipe with Everyone

There are countless methods for making braised pork, and everyone has their own unique way of doing it. Even if the same method is used, the results can vary greatly. It is not that simple to make a good braised pork; you can't just learn it by looking at a recipe. So what is the authentic method? I will teach you one way. Prepare pork belly, and cut the meat into pieces the size of Mahjong tiles.

Add water to the pot, put in the meat pieces, and add cooking wine. Bring to a boil over high heat to remove the blood.

Then take it out and rinse it with cold water, and drain the water.

Clean the pot, add the pork belly to the pot and fry it, making sure to fry all sides until the fat is rendered. Pour out the oil.

Next, add scallions, ginger, star anise, cinnamon, and bay leaves to the pot.

Add dark soy sauce for coloring.
