There are countless methods for making braised pork, and everyone has their own unique way of doing it. Even if the same method is used, the results can vary greatly. Prepare pork belly, and cut the meat into pieces the size of Mahjong tiles.

Add water to the pot, put in the meat pieces, and add cooking wine. Bring to a boil over high heat to remove the blood.

Clean the pot, add the pork belly to the pot and fry it, making sure to fry all sides until the fat is rendered. Pour out the oil.
