Belly-wrapped Chicken

Clean the pork belly first. The pork belly should be cleaned three times. For the first time, rinse off the mucus and grease in the pork belly with running water. (This dish uses a whole set of pork belly, which is difficult to buy, so it is recommended to go to the vegetable market and make a reservation with the store one or two days in advance.)

The second time, scrub with salt repeatedly, and then rinse with running water. Sprinkle cornstarch on the pork belly for the third time, rub it repeatedly, and rinse with running water. (Clean the pork belly three times, and the pork belly can be thoroughly cleaned. Clean and odor-free pork belly is the key to the success of this dish.)

Remove the head, neck, butt and claws of the whole chicken, and stuff the whole chicken into the pork belly. (The more authentic method is to fry white peppercorns until fragrant, then mash them, put them in a gauze bag, and stuff them into the belly of the chicken.)

Tie both ends of the pork belly with cotton rope, the tighter the better.

The stewing pot should be large enough to completely hold the whole belly-wrapped chicken, pour in hot water, completely cover the pork belly, and let the pork belly float.

Add Beiqi, Polygonatum odoratum, Adenophora Radix, Codonopsis, ginger slices, and red dates. (You can buy these Chinese herbal medicines in pharmacies.)

Bring to a boil on high heat, then change to low heat and simmer for about 90 minutes.

Remove the belly-wrapped chicken from the pot and cut it into pieces. After it has cooled slightly, take out the whole chicken.

Then cut the pork belly into pieces.

Cut the whole chicken into pieces and serve on a plate. (The whole chicken has been stewed very softly. If it is for banquets, you can put it directly into a large soup bowl without cutting it, and serve with the cut pork belly.)

Put another bowl of soup, add salt according to personal taste when drinking. This portion is enough for 4-5 people. It is actually quite OK with white rice. With the appetizers, two bowls of rice can be dried.

1 / If it is difficult to stuff the whole chicken into the pork belly for the first time, it is recommended to cut the chicken into small pieces when making it at home, blanch and wash it, and stuff it into the pork belly.
2/ It is best not to add salt when stewing the soup, it will inhibit the precipitation of umami, and add salt according to personal preference when drinking. Pork belly and chicken can be eaten with soy sauce.
