Home warmth

There is nothing more than the scent of food wafting from the kitchen every day:)

On a cold day like this, I think it's especially suitable for a pot of warm stew, so this "chicken paste cake" tonight is especially suitable. There is meat and staple food, just eat it directly in the pot after stewing, even the rice is saved, it is really fragrant, you must try it~

In fact, you can call this stew "family version of local pot chicken". Local pot dishes have less soup and mellow taste. Cakes lend the flavor of vegetables, and dishes lend the flavor of cakes. Nowadays, some chefs have improved the traditional local pot dishes, and introduced local pot dishes such as local pot fish, ground pot beef, ground pot three fresh, ground pot tofu, and ground pot lobster. Then you can start with my "family version of local pot chicken", which is simple and delicious~

Chicken Pastry

1. Add a pinch of salt to all-purpose flour and mix well.

2. Pour the water slowly while stirring.

3. Knead the flour into a smooth dough without bumps, and let the dough rest for more than 15 minutes. (Live noodles do not need to be fermented, and the dry humidity of the noodles should be appropriate. It is better not to stick to your hands.)

4. Dispose of the rooster, remove the unnecessary parts, chop into larger pieces, then blanch the chicken pieces, remove and rinse.

5. Heat a proper amount of oil in a pot, add the shallots, ginger, garlic, dried chili, and pepper to fragrant.

6. Pour the chicken and stir fry for a while, the surface of the chicken skin is slightly yellow.

7. Add cooking wine, dark soy sauce, and light soy sauce, stir fry evenly.

8. Change to a larger casserole and pour in the fried chicken nuggets.

9. Pour in boiling water to cover all the ingredients, cover the pot and simmer for 35-45 minutes.

10. At this time, the chicken broth is almost simmered, add salt to taste.

11. Spread a little cooking oil on the palms.

12. The awake dough is divided into dozens of parts, and each part is pressed by hand into a long dough. (Press the noodles thinly with your hands, the size and thickness are appropriate.)

13. Line the dough around the casserole.

14. Cover the pot and heat it for 7 to 8 minutes.

15. Remove the lid, the soup will thicken, sprinkle chopped green onion and serve. After the stew is done, just eat it directly in the pot. There are chicken, cakes and even rice.

TIPS

1 / When kneading the dough, the ratio of all-purpose flour to water is about 2:1. White noodles or multi-grain noodles can be used for noodles.

2/ To make this dish, it will taste good with a small cock. It would be better if you can buy free-range roosters, this kind of chicken tastes firm and has an excellent texture.
