Chocolate Balls
1.
Prepare chocolate, potatoes, coconut flour, and pine nuts.
2.
Wash the potatoes, cut them into thick slices, and steam them in a steamer until soft.
3.
Break the chocolate into small pieces and put them in a clean, heat-resistant bowl. Prepare another large heat-resistant bowl, pour in hot water of about 60-70 degrees, and then put it in the chocolate bowl, keep the water in the water and wait for the chocolate to melt.
4.
Peel the steamed potatoes and press them into a puree with a spoon. Pour the coconut flour in 2 times and stir evenly in one direction.
5.
Then pour the peeled pine nuts into the mashed potatoes and stir well.
6.
Knead the mixed mashed potatoes into balls of the same size and put them in a bowl.
7.
Pour the chocolate sauce on the mashed potatoes, set aside until the top hemisphere of the chocolate ball is dry, turn over the other surface and pour the chocolate sauce.
8.
While the chocolate on the flipped side is moist, use a small fork to scratch the surface of the chocolate ball to pull out irregular textures to make the chocolate more dynamic. Just wait for the chocolate ball to dry.
Tips:
1. The water temperature of the melted chocolate does not need to be too hot, 60-70 degrees is just right, too high temperature will cause the chocolate to separate from oil and water.
2. Adding coconut flour can not only improve the fragrance, but also make the mashed potatoes more delicate and melt in the mouth.
3. Chocolate is very difficult to dry. You must wait for the chocolate to dry before turning it over. Otherwise, it will be easily deformed. It took me 5 hours to make 4 chocolate balls. Be patient.
