Cold Fried Thousand Sheets

Cut a thousand sheets into 1/8 pieces.

Fry in a frying pan until golden brown.

Pour boiling water into the pot, add ginger, spring onion, star anise, cinnamon and dried orange peel (other seasonings can be added according to taste), add light soy sauce, dark soy sauce, and salt, and simmer for 30 to 40 minutes.

Let cool, squeeze out the soup within a thousand sheets, cut into silk and serve on a plate. Put a few dried chilies, a little cooked sesame, pepper, and sugar in a dry bowl, pour the hot oil into the bowl and mix well.
Then add minced garlic, minced ginger, and chopped green onion, put light soy sauce, sesame oil and stir evenly on top of the thousand sheets.
Tips:
The special thing about this dish is that it must be deep-fried to remove the moisture in the thousand sheets to form pores and the taste will be elastic and more delicious.
