Fried Fish Fillet with Sesame Seeds

Prepare 350 grams of grass carp meat (boneless). Thick meat is better. Soak up the water with a paper towel and cut into thin skins. Put in an appropriate amount of salt, chicken essence, oyster sauce, cooking wine, stir well and set aside. The salty taste of this dish is mainly pickled here, and a little oyster sauce is added at the back to improve the freshness, which is easy to operate. It doesn't matter if the fish is salty, it won't taste good when it is weak.

Prepare black sesame seeds, shred ginger, mince garlic, cut green onion into sections, shred pickled peppers, and chop coriander. Set aside.

1. Put the wok on the stove, heat it to slightly smoke, put it in the cold oil pan, pour out the oil, and then add the cold oil. The hot pot is for the non-stick pan when frying the fish fillets. 2. After the oil is in the pot, add black sesame seeds, stir fry to get a fragrance, add ginger, garlic, green onion, chopped peanuts, a small amount of oyster sauce, and stir fry together. Because the fish has been marinated and the pickled peppers have a salty taste, just put a little oyster sauce here for freshness.

Stir fry the ingredients, add the fish fillet, spread it flat, shake the wok a few times, turn it over, continue to shake the wok, see the fish start to turn white, add the chopped coriander and stir fry a few times to get out of the pan. If you are not accustomed to shaking the pot, just stir fry it directly. The fish fillets will not easily fall apart when they are not well cooked. Mine is a large fire stove, cooked quickly, and if the fire is small at home, pay attention to the color of the fish fillets.

When the fish fillets are fried to 7 or 8 when they are mature, they will become like this after a while. They are basically cooked, and the fish is tender and fragrant in the mouth. If you like it crispy, you can also stir-fry it a little bit. It feels like sashimi, but the fish is not very raw and has a wonderful taste.
Tips:
1. The fish should be thick, old water, sliced well and not easily scattered.
2. Just let the sesame seeds come out with a small heat, don't fry them. You can put the chopped peanuts and pickled peppers as you like. If you eat it spicy, add some rice and chili and stir fry together.
3. Be sure to pay attention to the heat when fried fish fillets, at most 7 or 8 when they are mature, they must be served in the pan. Do not wait until they are fully cooked, otherwise the fish will become loose and tasteless.
