Little Hedgehog Bean Paste and Glutinous Rice Ball
1.
Mix three kinds of powder and add sugar
2.
Pour in hot water and stir quickly with chopsticks. The water absorption of each powder is different. The quantity is for reference only (it is best to wear disposable gloves to knead)
3.
Knead into a dough and add lard
4.
Knead the lard into the dough. After kneading, cover with plastic wrap and let it stand for 15 minutes. Prepare the fillings, 18 grams each, round and set aside
5.
Divide the dough into 7 pieces of 40 grams, 1 piece of 10 grams, 1 piece of 7 grams, and 1 piece of 105 grams. The rest is reserved. Cover all with plastic wrap to prevent air drying
6.
10g of edible bamboo charcoal powder is kneaded into a black dough, 7g of red yeast rice is kneaded into a small red dough, 105g of cocoa powder is kneaded into a gray dough (don’t look at the gray color so light, steam it well) Then it will be as dark as the finished picture)
7.
40 grams of dough is pressed into a nest with your thumb and put in the filling
8.
Close up and round
9.
Take 15 grams of the gray dough and roll it into an oval shape
10.
Cover on the small ball
11.
Use scissors to cut out small thorns
12.
Use the spare white dough to pull out a little to make 4 feet and nose respectively
13.
Glue the eyes and blush
14.
Put it in a steamer, pad it with oil paper, and steam it in a pot on boiling water for 15 minutes.
Tips:
The above weight can make 6-7 small hedgehogs, the taste is QQ, not very soft, if you want a softer taste, put a little less sticky rice flour. The ratio can be adjusted by yourself, not necessarily according to my recipe.
