Pumpkin Okara Flower Bun

Raw material map: Peel the pumpkin, cut into pieces, steam it in a pot and press into a puree; stir-fry the bean dregs over a low fire, and soak the red dates in warm water for one hour.

Take a stainless steel bowl and sift into the flour, pour in the bean dregs, pumpkin puree, dry yeast and baking powder, and mix all the ingredients into a powder-free state.

Knead for 8-10 minutes to form a smooth, non-sticky dough. Spread a little oil on the bottom of the bowl, then put the dough in the dough, cover with insurance film or wrung out a damp cloth and leave it to ferment in a warm place.

The dough is fermented for about 1-2 hours to 1.5~2 times as big.

Remove some flour on the chopping board, then move the dough to the chopping board, remove some flour, and knead them into a bubble-free and smooth dough.

Press flat into an oval shape.

Cut into even long strips of dough.

Take a long strip of dough and knead it into a round dough with a larger middle and smaller ends.

Then squash the head and tail at 2 cm.

As shown in the picture, the ends of the dough are folded toward the middle.

Stuff a red date to decorate the bend.

Cut two cuts on the folded top to make petals.

Each petal is pressed into a vein with a toothpick, and then arranged into a petal shape.

Spread hot and soft lettuce leaves on the steamer, and arrange the raw steamed buns at intervals (if the bottom of the stainless steel steamer, please spread a layer of cotton cloth to prevent the steamed buns from getting wet), continue to ferment for about 40 minutes until the steamed buns are very puffy.

Put the steamer in a pot of boiling water, turn on medium heat and steam for 15 minutes, turn off the heat and leave it for about 5 minutes, then remove the steamer and let it simmer for 3 minutes before opening the lid, so that the finished product will not wrinkle easily.
Tips:
1. Because pumpkin puree contains water, and bean dregs also contain water, avoid adding too much flour, so the bean dregs are slightly fried to dry the water, so that the steamed buns will be softer and more fragrant. Different varieties of pumpkins have different water content. If the dough is too hard or too soft, add water or flour appropriately.
2. Dried red dates should be soaked in advance until the skin is smooth, so that they will taste softer and sweeter.
