Purple Potato Taro Balls

A medium-sized purple sweet potato, about 100g, cut and steamed.

The purple sweet potato is peeled and crushed, then tapioca flour and a small amount of water are added to form a dough.

Flatten the dough into a dough. It doesn't need to be very thin, about 5 mm. Use a small mold you like to press out the shape, or just rub it into a long strip and cut into small sections.

A part of the dough was shaped with a mold, and the other part was directly rubbed and cut into small pieces.

Bring the water in the pot to a boil, add the taro balls and cook until they float.

Take the taro balls out of cold water and pass them a few more times. This will make the taro balls bounce.

Add taro balls to your favorite dessert and enjoy. I put the taro balls into the almond paste.
Tips:
Both purple sweet potato and red sweet potato can be made into taro balls, and the red sweet potato is yellow. It's inevitable that you can't worry about additives such as pigments sold outside, and it's easy to do it yourself.
