Refining Old Hen Oil

Brush the pot clean, open the heat to heat the pot, heat up all the water, and there should be no water in the pot.

After the pot is clean, pour the old hen oil cubes, the old hen oil cubes also have no moisture. Prevent frying pan during oil refining process.

The pot is slanted, change the fire to a low temperature and slowly cook.

Soon, a lot of chanterelles came out.

The chicken fat cubes are a bit big. I picked them up with chopsticks and cut them down a little bit with kitchen scissors to speed up the oil refining.

When the oil in every block of chicken oil is refined and the block becomes hard, the oil refining is over.

Pick out the oily residue, and what is left is chicken fat. A colander can be used here to filter the oily residue more cleanly.
