Spicy Dried Duck Hot Pot
1.
Cut the marinated dried duck into pieces and soak in a basin for several hours. If it is salty, soak it for a while. If it is not salty, soak it for about half an hour.
2.
Take the soaked dry duck out to control the dry water
3.
Pour an appropriate amount of oil into the pot, heat on medium heat, pour in the dried duck and stir fry
4.
Stir-fry until moist and dry, the dried duck overflows with oil and the skin is slightly browned, add star anise cinnamon and stir-fry
5.
Stir fry until the aroma overflows, then add dried chilies and stir fry over low heat
6.
Stir-fry evenly and pour in some dark soy sauce
7.
Then pour in boiling water that has not been used for dried duck and boil on high heat (a little more water, dried duck is harder and harder to cook, and it is made into a hot pot, requiring more soup to blanch the side dishes)
8.
When the pot boils, turn to low heat and simmer slowly
9.
When half of the soup is left in the pot, add garlic cloves and continue to simmer. There is still one-third of the water in the simmering pot, and the dried duck can be turned off when it is soft.
10.
While simmering, soak the sweet potato vermicelli in warm water
11.
Wash the lettuce or favorite vegetables, prepare meatballs or all kinds of balls, soak the vermicelli and drain the water. After the dried duck is roasted, you can put them in the past and cook them. Of course, you can put them in the soup and blanch them.
Tips:
1. Marinated dried duck is salty, so don't put salt in the cooking process. \n2, put more boiling water in the pot and simmer, because it is made into a hot pot, a lot of soup is needed to blanch the side dishes. If the water is fast to boil and the dried duck is not cooked yet soft, then you must add more boiling water to continue simmering\ n3. Put hot side dishes as you like
