Wormwood Youth League

Squeeze the wormwood juice. Mugwort picking tender head, as shown in the picture, about 120g, wash.

Boil a pot of boiling water, add 1 teaspoon of baking soda powder, and blanch the washed wormwood in the boiling water. Put the food processor and cool boiled water to make a paste, and filter out the juice.

Heat the wormwood juice to a boil in an enlarged bowl of 60g orange powder, pour 80g wormwood juice into the orange powder and stir until it is uniform and without dry powder.

Put the glutinous rice flour in a pot, add sugar and lard, and cool the remaining wormwood juice to warm, then pour 110 grams into the glutinous rice flour and stir evenly.

Knead the well-stirred orange flour + glutinous rice flour into a dough. If it feels too dry, add wormwood juice or water as appropriate.

Spread oil on the plate, spread the dough on the plate, and steam for 20 minutes on the pot, cover with plastic wrap and let it dry until it is not hot. You don’t need to do this step, and you can steam it after wrapping the stuffing.

Make stuffing. The salted egg yolk is steamed and crushed. Stir well with the pork floss and salad dressing.

Divide into 12 parts and group them into balls.

Divide the red bean paste into 12 portions.

Divide the dough into 12 portions. Wearing disposable gloves, take a portion and knead it repeatedly for a while, knead it round and flatten it into a thick pie with a thin edge in the middle, and put a meat floss, egg yolk and red bean paste in the center.

Use the thumb of your left hand to lightly press the filling on the tiger's mouth of your right hand, and push up the dough with your index finger, thumb and tiger's mouth. (Because I want to take a photo, I can’t show the movement of my left hand)

Finally, the mouth is closed into a small point, and then the small point is pressed down and rounded.

A good youth league. If the filling is fresh, then it can be eaten. If it is not cooked stuffing or made from dough, steam it with oil paper or leaves with a fresh fragrance (such as palm leaves) before eating.

If you can't finish it for a while, brush a layer of salad oil on the surface of the green group, wrap it with plastic wrap, and store it in a fresh-keeping box. But it will harden in the refrigerator, just steam it when you eat it.
Tips:
1. The boiling wormwood juice is added to the orange powder, which can also be replaced with boiling water, the purpose is to gelatinize the orange powder. The glutinous rice flour is added with warm wormwood juice. It is said that warm water and noodles are not easy to crack.
2. A total of 190 grams of wormwood juice used in this recipe, if not enough, you can also use warm water (in glutinous rice flour) or boiled water (in orange flour) to supplement.
3. The wormwood paste can also be kneaded directly into the dough without filtering.
4. The filling material can be replaced. The filling ratio is about 1:1.5.
5. It’s best to eat it right away. I put it in the refrigerator and it hardens on the second day and cracks on the third day. Although it is still soft after steaming, it does not sell well.
