Yogurt Cheese Roll

The yogurt is put in a cloth bag with a fine mesh or a fine mesh. Mine is a nylon squeeze bag that I bought online. It looks like the mesh is very dense, but there is still yogurt leaching out, so I wrap it up with 3 layers of gauze.

Put the yogurt bag on a sieve and add it to the deep pot, fill it with a large fresh-keeping bag and tighten the mouth of the bag so that it does not leak out. Press it on the yogurt bag and refrigerate it for more than 36 hours. I pressed it for 48 hours (I did not do it in time).

Drain most of the water (whey) of the yogurt, put it in a bowl and stir evenly. Mine is sugar-free. If you like it, you can add powdered sugar to taste.

The purple sweet potato is peeled and sliced and steamed. It is pressed into a puree while it is hot. Add white sugar, milk and whipped cream, and stir-fry until it is like commercially available water bean paste. Pour it on the greased plastic wrap, wrap it and roll it into a square.

The yogurt is also wrapped in oiled plastic wrap and rolled into a square shape, which is the same size as the purple potato filling. The yogurt and purple potato filling are refrigerated for half an hour.

The yogurt slices are uncovered and laid on the chopping board (the plastic wrap is under the cheese), the purple potato filling is placed on the cheese slices, and the plastic wrap is removed. Place the rolling pin under the plastic wrap, and roll one end of the plastic wrap on the rolling pin.

Lift the rolling pin, the cling film is also lifted, while turning the rolling pin toward you, roll it forward. After rolling to the bottom, press the cheese roll with the rolling pin to your direction, and the other hand pulls the bottom layer of cling film at the same time Pull in the opposite direction to make the cheese roll roll tighter.

Tips:
①My yogurt is sugar-free, so the purple potato filling will be slightly sweet; if you are afraid of sour and sweet, you can add some powdered sugar to the yogurt.
②Whipped cream can be changed to butter, but the calories and fat are higher.
③ Yogurt and purple potato fillings are relatively wet and sticky, so you can brush oil on the plastic wrap to prevent sticking.
