Braised Pork on Rice

Three marinated large bones of unmarinated rake (if there are pork bones of marinated rake, this step and the next two steps will be omitted).

Add clean water to the electric pressure cooker to press the big bones against the water.

Select the ribs block, the default is 50 minutes.

Press it out and do not pour out the marinade.

Remove the meat from the big bones, tear them fine, add a little salt and mix well.

Wash the Wuchang rice slightly and prepare the electric pressure cooker to cook the rice. Do not have too little water, and the principle is to press out the rice to be soft and waxy.

After the rice is cooked and decompress, spread the shredded stewed pork and stewed pork hands on the rice. Close the lid of the pressure cooker and simmer for 20 minutes, and wait for the lo-mei to dip into the rice.

Tips:
1. I made it with the big flesh of the unmarinated rake, the electric pressure cooker and the rake. If there is a ready-made one, this step can be omitted.
2. Bone meat is used because bone meat is tender and fragrant than pure lean meat.
3. The rice must be cooked soft and waxy to make the marinade easier to taste.
4. After the rice is cooked, the stewed meat is simmered for a while and the marinade is added to the rice grains to make it more fragrant. It is better to pour a little bit of stewed meat in brine, but not too much, as there will be no more rice flavor. So the marinade oozing out of the bone that I use is enough.
5. The braised pork is added with a little salt and mixed well because it is eaten with rice, and a little salt is more delicious. Add or not to look at the braised pork salty and calm. My stewed pork is completely flavorful if I eat it alone, but rice is just right if I add salt.
6. Please ignore my photography technique, some pictures are out of focus. In the morning, there is no time to take pictures. Bone pressing and meat removal are done at night. The rice is cooked by appointment in the electric pressure cooker at night. Wake up in the morning, add the stewed meat and simmer for 20 minutes, put it out of the pot and serve on the table to take pictures and start eatingπππ
