Chaoshan Fried Bean Curd

Add minced meat, minced red pepper and minced green onion, mix well, add seasoning and appropriate amount of starch and mix in one direction to form a gel.

Remove the head and tail of the bean sprouts, cut into small pieces about 1.5 cm in length, add the minced meat and mix well, then sprinkle the chopped green onion into the bean sprouts.

As shown in the picture, Chaoshan dried soybeans are cut diagonally into two triangular dried tofu, and the dried tofu meat is scooped out with a special spoon.

Pack the dug dried bean curd with bean sprouts meat filling for later use.

Press the dug out dried bean curd meat into puree, add sweet potato flour and appropriate amount of water to make bean puree batter.

Seal the dried bean curd with bean paste as shown in the picture.

Heat oil in a pan, add dried tofu and fry on medium heat until cooked.

Just remove the drain oil. (Dried bean curd is best served hot with chili sauce!)
Tips:
◎The fish sauce in the minced meat can make the minced meat taste more fresh, so the seasoning is indispensable.
◎There should be more bean sprouts in the bean sprouts meat filling, so it tastes better.
◎Fry the dried tofu slowly over medium heat, and the dried tofu will float after being cooked.
