1. Soak wild dried mushrooms in cold water for 2 hours, clean them, and set aside

3. The blanched chicken drumsticks are rinsed and set aside

4. Add water to a boiling pot, add chicken thighs, add star anise, green onion, cooking wine and salt

5. Put the mushrooms in. At this time, look at the amount of water. If you want to drink the soup, add a little more water to the mushrooms. Cover it, I’m using a pressure cooker and boil it for 20 minutes

6. When the time is up, just open the lid and add the chopped green onion

Tips:

Wild mushrooms and little stupid chicken are a natural pair. They can be stewed together. If meat chicken is used, mushrooms must be cooked first, because mushrooms are very difficult to cook.

When cooking chicken and mushrooms, you don’t need to add too much seasoning. Just add star anise and cooking wine. Don’t add peppercorns. The taste is mellow and not mixed. The meat is delicious and the soup is delicious. The soup needs to be added with water all at once. Enough, don't add it later, adding soup later will affect the taste of the soup.
