Chicken Salad with Mashed Potato Mix

Rinse the chicken breasts, like in a pot of cold water, put the green onion, ginger, pepper, star anise, and cook until the chopsticks can penetrate (about 20 minutes), then add a little salt and cook for 10 minutes. Turn off the heat and remove it after it has cooled down naturally

Remove the leaves and shreds of celery, peel the tender lotus root, and peel the carrots before washing
