Cocktail Watermelon Mousse

Prepare the required materials.

Cut the gelatin into small pieces and soak in ice water for 10 minutes.

Take 100 grams of watermelon and dice for use. Add sugar to the remaining pieces and put them in a blender for 30 seconds.

Gelatine melts into a liquid by heating it with water.

Add yogurt to the watermelon and stir well.

Add the RIO cocktail.

Add gelatine and stir to mix quickly. Skim the foam after mixing.

Put the diced watermelon in the mousse cup.

Add the mousse liquid to two-thirds of the mousse cup, put it in the freezer layer of the refrigerator and freeze for 15 minutes until the surface is solidified.
10.
Gently pour the remaining mousse liquid with a spoon, and refrigerate for 3 hours.
Tips:
The foam on the surface of the mousse must be skimmed off. Otherwise, the mousse doesn't look delicate after it's done. The refrigeration time depends on the temperature of the personal refrigerator.
