Colored Noodles
1.
Prepare 3 colors of vegetables, spinach, carrots, and purple cabbage, and wash them separately.
2.
Add a little water to the washed spinach, break it with a food processor, filter out the residue with gauze, and retain the juice; wash the carrots and purple cabbage and cut into small pieces, add a little water to break it with a food processor, and filter it out with gauze The residue retains the juice. The three colors of vegetable juice are divided into three bowls, and the flour for pressing the noodles is prepared at the same time. Flour? That's right, high-gluten bread flour is used this time.
3.
The noodle machine is installed in place, put in the golden dragon fish flour after the power is turned on, the noodle machine automatically weighs, close the lid, press the chewy noodles, the noodle machine automatically calculates the water consumption.
4.
Add purple cabbage juice to the water cup, install the water cup in place, click to start, the noodle machine will automatically run, and wait for the noodles later.
5.
After the noodle machine is stirred and left to stand, it runs again, and the noodles will come out soon, and the panel is ready and the noodles are ready. The high-gluten flour is very absorbent, and the pressed noodles will never stick together.
6.
After the purple noodles are pressed, the noodle machine automatically stops, and the above steps are repeated again, the vegetable juice is replaced with carrot juice, and the yellow noodles will soon come out.
7.
Finally, continue to put the flour, the vegetable juice is spinach juice, and the green noodles are quickly pressed out, and the pressed noodles are rolled up and placed on the side of the chopping board.
8.
This is all the noodles that have been pressed and cannot be eaten at a time. You can put them in a fresh-keeping bag and put them in the refrigerator or freeze them. If you don't eat them for a long time, keep them in the refrigerator.
9.
When I took another photo the next day, the purple and yellow colors became lighter. There is no problem with the green ones. These are pure vegetable juices, so feel free to eat them.
10.
I cooked a little green noodles. The color is really bright. The noodles are very chewy and taste better than the noodles made with all-purpose flour.
Tips:
1. When squeezing vegetable juice, just put a little water, as long as the mixer can move, the more water you put, the lighter the color of the noodles. Purple cabbage and carrots will fade, the longer they are left, the lighter the color, but the color of the noodles with spinach juice does not change much.
2. The pressed noodles do not need to be powdered to prevent sticking. The noodles after refrigerating or freezing in the refrigerator will not stick together when they are put in the pan again, and the taste is still very chewy.
