Cucumber and Cowpea Noodles with Sesame Sauce

First prepare all the ingredients.

Wash the cucumbers and remove their flesh, and cut them into filaments with a knife.

Remove the skin of the ham and cut it into filaments with a knife. Cut the parsley into sections.

Pour peanut oil after the pan is heated, pour the beaten egg liquid into the pan and spread it into egg skins. I like the hotter one, just fry it crispy.

Use a knife to cut the fried egg crust into thin filaments.

After the garlic is peeled, use a garlic masher to mash it into garlic.

Take a larger bowl and add tahini.

Add sugar to the bowl first.

Add apple cider vinegar to the bowl to enhance the flavor.

Finally, pour in the very fresh soy sauce for seasoning and mixing.

Add 2 tablespoons of warm water, mix all the seasonings and stir evenly for later use.

After the cowpea noodles are cooked, pass cold water, remove and drain the water and put it in a bowl.

Spread cucumber and ham shreds and egg shreds on top.

Pour some mashed garlic on top, sprinkle with coriander, and enjoy it. My husband likes it so much, hehe, he ate two bowls in one go.
Tips:
There is no cowpea noodles, you can use other noodles instead, but the taste is definitely different...
