Duck with Red Oil Lettuce

Peel the lettuce, cut into pieces with a hob and wash for later use

Chop the duck legs into pieces, wash and set aside.

Put the duck pieces in boiling water for 3 minutes, remove and drain.

Put the duck pieces in the oil pan on medium heat when it is 60% hot, stir-fry for 3 minutes to force out the moisture, and then remove the oil after sautéing.

Heat the base oil over medium heat, add green onion, ginger, garlic, and chili until fragrant.

Add 1 tablespoon of bean paste and 1 tablespoon of chili oil.

Change the heat to a low heat and slowly fry the red oil.

Put the duck pieces in the red oil and stir fry for 3 minutes.

Add cooking wine, salt and light soy sauce, add a small bowl of water and stir fry for a while.

Add lettuce cubes and boil on high heat, then change to low heat and simmer for 15 minutes.

Finally, change the fire to harvest the juice.
Tips:
1 When frying the bean paste, use a medium to low heat. Do not fry the bean paste to affect the taste.
2 Put the duck pieces in boiling water before cooking to remove fishy.
