Fried Pigeon Gizzards with Capers

Prepare pigeon gizzards, green red peppers, ginger and garlic.

Wash pigeon gizzards and cut into thin slices.

Add starch and salt, mix well and set aside.

Cut green and red peppers into small pieces.
5.
Cut ginger and garlic into thin strips.

Soak the pigeon gizzards with tender oil and set aside.

Stir ginger and garlic with the remaining oil in the pot; add the sour beans and stir fry.

Pour in green and red pepper, add a little salt, and stir well.

Tips:
1. The gizzards are slightly pickled with starch salt for a while for a good taste.
2. Dove gizzards are soaked in tender oil, and the stir-frying time should not be too long, so as not to be too old to bite.
