Fried Scallops with Leek

Thaw the fresh scallops to remove the dirt (the unpleasant things are removed, they seem to be internal organs or something), rinse them, and soak them in water and cooking wine for 1 hour. Soaking time is not counted as cooking time, otherwise it would not be a quick dish. Of course, soaking for a period of time is also my own idea. It doesn't matter if you don't soak, the smell of fresh shells is not very strong.

Remove and drain the water before frying.

Wash the leeks and cut into small pieces.

Put the oil in the hot pan for a short while, add the fresh shellfish and fry the water out.

After the water vapor in the pot is reduced, add the leek segments and stir fry quickly.

After adding salt, stir quickly and out of the pot.
