Giant Chocolate Bagel--a New Taste Bread with Cake Mold

1. First make the cocoa walnut filling, part of the filling and part of the ingredients, and cut the chocolate butter into pieces in a heat-resistant container

2. Heat it in a microwave at low level until it melts and mix it evenly into a chocolate sauce

3. Add 30g milk, 30g honey

4. Mix well as shown in the figure

5. Add 25g almond flour, 25g bread flour, and half a teaspoon of cinnamon powder

9. When the filling is done, make the soup first for the bread part (preferably one day in advance and refrigerate overnight)

The method of soup type is to mix 10g high-gluten flour and 50g water in a 65 degree soup type pot, heat it to 65 degrees away from the fire (it is a batter)

10. Continue to stir evenly, let cool and airtight in the refrigerator

15. After fermentation for about 1 hour, the dough is exhausted

16. Cover with plastic wrap and let stand for 15 minutes

17. Roll the dough into about 15cmX35cm size (fermented surface facing down)

18. Smooth the filling in the middle, leaving some on each side

19. Roll tightly into a roll

20. Flatten one end with a rolling pin

21. Roll into a length of about 40cm, tighten both ends, and insert into the mold (bottom side up)

22. Fermentation in a warm and humid environment to about 2 times the size (mine is the oven fermentation gear 40 degrees 40 minutes) the pre-heated oven 180 degrees, the lower and middle layers of the oven are fired up and down for 23 minutes

Next, make the coffee frosting for the surface decoration

24. Add 1 teaspoon of instant coffee to 1/4 tablespoon of boiling water

25. Mix the instant coffee and boiling water thoroughly

26. Add 20g icing sugar in batches and mix well

27. The final coffee frosting is in this state. Cut a small mouth with piping paper and pour it on the surface of the baked bread at will, sprinkle with chocolate chips, and sift the powdered sugar.

Tips:

1 The bagel can also be decorated without the final coffee frosting or any decoration

2 If you don’t use soup, use 150g high-gluten flour for dough, 70g water or milk

3 Add milk or water little by little when making noodles, because different flour absorbs water differently

4 The fillings can also be chosen at will~
