Golden Sands Corn
1.
Cook the salted egg yolk and take out the broken eggs. I use the cooked salted egg yolk, which can be used directly. After removing the raw salted egg yolk, add a little cooking wine and steam it in a steamer for 10 minutes.
2.
Wash the corn kernels
3.
Chop red pepper, wash and set aside
4.
Break the egg, add the egg yolk to the corn and stir evenly. The egg yolk is relatively sticky and can adhere to the surface of the corn kernels firmly. It will be firmer when it is coated with starch and it is not easy to peel off during frying.
5.
Then add a small amount of custard powder and starch and stir evenly, so that the corn kernels are evenly coated with the batter. The custard powder is a kind of spice powder that provides color and fragrance. After adding custard powder, it will become yellower and more color when fried. Bright.
6.
Pour a proper amount of oil into the pot, add the mixed corn kernels after the oil is hot, and fry until the batter on the corn kernels is crisped and then remove. Note: First, pay attention to the control of the oil temperature, and wait until the oil burns and smokes. For corn kernels, the batter will deflour when the oil temperature is low; second, don’t move it after putting it in the oil pan, wait for the starch outside to fry into shape, then the landlord can use it, but don’t turn it too hard, otherwise the starch shell will be the same as the corn. The grains fall apart.
7.
After the corn kernels are coated with egg liquid, the custard powder is placed first, and then the starch is placed in the pan. If the starch is hung first, the flour dries out while waiting for the oil temperature.
8.
Fry until the batter on the corn kernels becomes crispy and you can remove it
9.
Leave the bottom oil in the pot, pour in the salted egg yolk and stir fry until bubbles. Note: When scrambled salted egg yolks, be sure to have a low fire. Large fires are easy to fry. It is enough to start frying around the end of the egg yolk.
10.
Pour in the fried corn kernels, add salt and sugar to taste, stir fry until the corn is evenly coated with egg yolk, because the salted egg yolk contains salt, so you only need to add a little salt and sugar to taste during subsequent cooking. Don't put MSG, MSG will spoil the salty taste of the whole dish. The finished Jinsha corn must be eaten while it's hot, crispy and salty, so you don't have to worry about your baby not eating!
Tips:
For corn, choose fresh fruit corn or canned corn, which tastes better. Don't buy waxy corn, it is not easy to be coated with starch. Custard powder is a kind of spice powder that provides color and fragrance. When custard powder is added, it will become yellower and brighter when fried.
