I have traveled through many cities and have eaten beef ramen, scallion noodles, Korean cold noodles, Chongqing noodles, dandan noodles, jajang noodles, all kinds of topped noodles, Japanese-style ramen noodles dipping noodles, my favorite The noodles are still the green onion egg noodles of grandma's.
I am a grandmother brought up children, from snacks grandma cooked rice. In the winter in the north, the morning was frosty, and a bowl of fragrant green onion egg noodles hooked me up from the bed, warming me from the inside to the outside. When I started reading at night, my grandma's love energized me.
Today is Children's Day. I am alone in a foreign country. Thinking of the taste I missed in my childhood memories, I decided to write this recipe.

There are few steps and easy operation, everyone can learn it well. It is wallet-friendly and uses the cheapest ingredients to make delicious foods that heal the body and mind.
For the above reasons, I sincerely recommend my favorite flavor from childhood to growing up to all my friends. ❀️

1. The first step: prepare materials. It is recommended to use thin noodles, as shown in the picture, and the manufacturer brand is not limited.

It is difficult to buy some noodles in Japan, so I use plain noodles (そうめん) instead. Although the taste and texture are not the same, there are some soft noodles to eat, which is very satisfying.

2. The second step: cooking noodles.
Prepare a pot of water, boil the bubbles, and cook the noodles until they are done.

This step is cooking the noodles. There is no special emphasis, so I didn't take pictures. If you need to refer to it, you can post it next time.

3. The third step: adjust the sauce.
Take advantage of the free time during noodle cooking, put chopped green onion, pour light soy sauce, drip sesame oil, and sprinkle black pepper in a bowl.

Be careful not to pour too much soy sauce, it will be very salty if you pour too much, even if you don't put salt!
According to personal preference, it does not matter if you put a little more chopped green onion and pepper, but for taste and health considerations, it is best to control the amount of soy sauce and sesame oil.

4.
The fourth step: out of the pot.
After the noodles are cooked, pour a small bowl of noodle soup and pour the sauce through. Take the noodles out of the pot and put them in the prepared soup and stir.

Friends who like to eat eggs can pour another poached egg or fry an egg, the kind that is sizzling and fragrant! 🍳🍜

7. 6/13 Supplement: A friend asked me which type of light soy sauce I use. I usually use this light soy sauce king. In fact, as long as it is not a dark soy sauce, everyone can choose your favorite soy sauce ☺️

Tips:

Some dispensable thoughts:

The light soy sauce my family likes to use is the most classic Haitian brand. I have only used this for many years abroad, and I don’t want to cook when I can’t buy it.

Since this noodle is too simple and plain, I thought it was unnecessary to write it down. But in the lower kitchen, I saw many similar noodle soup recipes with vinegar, but it was still different. I wanted to write a recipe to inherit the craftsmanship of my grandma and share the deliciousness with everyone.
