Hand-made Noodles with Small Bamboo Shoots
1.
Mother-in-law’s hand-made noodles are all kung fu work, and I’m only responsible for cooking 😂.
2.
Cut the lean pork and beef longitudinally according to the horizontal stripes so that the meat will be tender. Marinate for 30 minutes. Grab the starch before cooking.
3.
Prepare the dried bamboo shoots, shiitake mushroom soaking and the seasonal vegetables you want to add, and set aside.
4.
Grab the meat with starch and pour some oil into it, so that the fried meat is easier to separate and the meat is more tender! (This is my little trick for frying meat ✌) Fry it on fire and set it aside! Heat the pot and pour the carrots and mushrooms and stir fry, stir-fry until the carrots are excellent, then pour in boiling water, add appropriate amount of salt, and then strip! There is salt and oil in the soup, so the noodles do not stick together easily.
5.
Cook the noodles until the appearance is slightly translucent, add the meat and cook for another two minutes to adjust the taste, and finally add the leeks. It's ready to be cooked! ✌
