Head Bean Soup

This is what I call a very important step. Cut the tofu into cubes and soak it in light salt water for half an hour. This will remove the beany flavor well.

Put the fish head and fish bones into the pot, add the onion, ginger, garlic, pepper and cooking wine, and pour in an appropriate amount of water.

After the fire is boiled, add the soaked tofu cubes.

Turn to low heat (must be low, otherwise the tofu will be boiled) continue to cook for about ten minutes, you can see the pure soup, add salt, and season with chicken essence.
