Mountain Spring Mushroom Tofu Soup

Blanch the mushrooms in water and set aside.

Stir-fry the ginger and garlic with oil, add mushrooms and continue to stir fry. One minute later, add spring water and soft tofu. Turn the heat to high, and when it boils, turn to medium heat and cook.

After fifteen minutes, turn off the heat, add sesame oil, pepper, and chives.
