Noodles with Shredded Chicken and Sesame Sauce
1.
Prepare the required ingredients;
2.
Place the soba noodles in clean water and soak for about half an hour to soften the soba noodles. Note: My soba noodles are instant noodles, just soak them. If they are not instant noodles, you can put them in a pot and cook them in cold water. !
3.
When soaking the soba noodles, place the chicken breast in a pot under cold water, then put ginger slices, green onion knots, and 1 spoon of cooking wine into the pot. Cook for about 10 minutes on high heat. When the chopsticks are pierced and there is no pressure, take out the chicken breast and cool for later use;
4.
Mix the noodle sauce: add minced garlic, chopped green onions, white sesame seeds and coarse and fine chili powder in a bowl, drizzle with some hot oil, then add 1 spoon of peanut butter, 2 spoons of light soy sauce, 1 spoon of dark soy sauce, 2 spoons of vinegar, 1 tablespoon of sugar, appropriate amount of salt, mix well and set aside;
5.
Tear the cooled chicken breast along the lines into thin strips, the thinner the better;
6.
Then drain the noodles and place them in a bowl, add shredded chicken breast, rub cucumber into shredded cucumber, put some golden beans or fried peanuts, drizzle with the pre-prepared sauce, stir evenly and serve. ;
