Raw Chocolate (cocoa Mass Version)

Chop the cocoa liquor and cocoa butter for later use

Pour the sugar and whipped cream into the cooking bowl, and heat the water bath until the sugar is completely melted. Then turn off the fire and use the residual temperature of the water to keep it warm. Pour the chopped cocoa butter and cocoa liquor into the whipped cream, and use a mixer to mix evenly.

Spread baking paper into the mold, then pour the melted chocolate liquid into the mold, and wait for it to cool naturally.

After cooling and solidifying, sprinkle with cocoa powder

Use cotton thread to cut the chocolate into appropriate sizes.
