Tips:
When using a food processor to beat red beans, be sure to add enough water, otherwise the red bean paste will be too viscous and the food processor will not be able to beat, but the machine will be destroyed; when the red bean paste is fried, it will be very viscous, so add a proper amount of vegetable oil. One is anti-sticking, and the other is to make the filling more moisturizing and sweet; adding brown sugar to red beans not only has a strong taste, but also a more attractive color; the amount of sugar can be increased according to the taste, but not too little, because more sugar can extend the shelf life; Be sure to stir-fry, a shovel can provoke a lump, even if the stir-fry is done. Too thin red bean paste in the moon cake will cause the moon cake to swell and crack; the fried red bean paste can be used alone or in combination with salted egg yolk or other dried fruits to add more flavor.
