Stir-fried Colorful Fish Fillet with Snow Peas

Clean up the colorful spots you bought and cut them into fish fillets. Add appropriate amount of salt, starch, egg white, ginger shreds, and cooking wine. Grab it well and marinate.

Adjust the juice: salt, pepper, starch and a little water, mix well.

Boil water in a saucepan, add a few drops of oil and an appropriate amount of salt, put snow peas in it, blanch them, and remove them for later use.

Then put the marinated fish fillets into the pot one by one, and remove them as soon as they turn white.

Heat the pan with cold oil, add carrot slices, blanched snow peas, and fish slices in turn and stir-fry.

Finally, pour in the prepared seasonings, stir-fry evenly, and then serve them on the plate.
Tips:
1. When blanching the fish fillets, put them in one by one, take care to remove them just after they change color.
2. Don't fry the fish fillets for too long, pay attention to adjust the bowl of juice first. Don't turn the fish fillets too much after putting them in to avoid the fish fillets from being broken.
