Soak the lotus seeds in advance, remove the core, you can buy fresh lotus seeds when convenient

Cut the ribs into sections, soak them in water for 20 minutes, then rinse the ribs a few times and drain them

Peel off the lotus root, cut into sections and smash

Cut scallion white diagonally, and slice garlic

Pour more oil than usual in the pan, add the ribs and stir-fry on medium heat until the meat is tightened and the bones on both sides are slightly exposed

Then put the lotus root pieces and lotus seeds into the pot, stir fry twice, add tomato sauce and stir well

Add green onion, ginger and garlic, add light soy sauce, dark soy sauce, sugar and stir well, then add the horizontal ingredients, put in the hawthorn slices, cover the lid, turn to low heat and simmer for about 40 minutes.

Tips:
1. If you don’t have time to soak the ribs, you can blanch them and then fry them, so that there will be no foam when they are stewed.
2. The lotus root is easy to oxidize and turn black after peeling. If you don’t use it right away, you can soak it in white vinegar to avoid oxidation.
