Turtle in White Soup

One yellow-skinned turtle, press the turtle's back with both hands, squeeze out the turtle's head, quickly grab the turtle's neck, and cut off the turtle's head. Boil the turtle with 80 degrees hot water, first blanch the turtle's feet and release the turtle's blood. After the limbs are scalded, place the turtle's entire body in the water, flip and scald the skin. After scalding for 30 seconds, tear off the shell, limbs and mucous membranes on the neck, and then change the water to clean it.

Under the shell, the knife cuts along the turtle shell, cut off the side bones and tail bones, lift the turtle cover, remove the turtle internal organs, keep the turtle kidneys, and don't use the rest. Split the upper and lower turtle shells, tear off part of the fat, and after washing, chop the turtle into suitable size pieces for use in basin equipment.

An appropriate amount of green chili peppers, cut into chili rings and set aside. 1 long loofah, peel off the skin, cut the hob block and put it in a bowl for later use. Turtle in a pot under cold water, drain it thoroughly and remove it into cold water to wash away the blood and remove the fat and oil.

Heat up the right amount of lard in the pan, add thick ginger slices to fragrant after boiling, add the turtle, stir fry over high heat, stir-fry the water, add appropriate amount of salt, and saute the turtle to fragrant. After sauteing, add appropriate amount of Erguotou wine, simmer for 10 seconds and then stir-fry the wine dry, add appropriate amount of garlic and red pepper, stir fry evenly. Add appropriate amount of broth, cover the pot and cook for 10 minutes on high heat until the soup turns white.

After the soup turns white, turn to low heat and simmer for 45 minutes (just 10 minutes to feed the turtle), and simmer the turtle. After 45 minutes, add the loofah and turtle kidney, turn to high heat and stir evenly. After the loofah is boiled, add the green pepper rings, chicken essence and white pepper powder, stir evenly, stir fry until the green peppers are broken, and you can start the pan.
