Yam Lamb Soup

Wash the lamb, cut into pieces, put it into the pot with cold water, do not cover the pot (to let the mutton smell volatilize), boil, and skim the foam.

Add ginger slices and cooking wine.

Add about 10 peppercorns.

Wash the chives, knot them, and put them in the pot. Cover the pot and simmer for 20 minutes on medium-low heat.

Wash the carrots and yam, peel them, and cut into pieces with a hob.

After 20 minutes, add carrot and yam cubes and simmer for another 30 minutes.
7.
After 50 minutes, add salt to taste.
8.
Wash the garlic sprouts and coriander, chop them, and put them in a bowl.
9.
Stir in the mutton soup.
Tips:
If the lamb has a strong smell, it is recommended to blanch it and remove it, add boiling water and stew.
