100% Whole Wheat Toast
1.
First make Polish seed starter: 50 grams of high-gluten flour + 50 grams of water + 1 gram of dry yeast
2.
Mix the ingredients evenly, cover with plastic wrap, and ferment for 1 hour at room temperature (in summer).
3.
When the fermented seeds are filled with many small bubbles, move to the refrigerator to refrigerate for about 16 hours.
4.
Making dough: Because whole wheat flour is highly absorbent, except for oil and yeast, first mix other ingredients and let it stand for half an hour.
5.
Let it stand for half an hour and then add the yeast, stir in the cook machine for 10 minutes, and then add the oil.
6.
After adding the oil, continue to stir and knead the dough until the film is formed.
7.
Cover with plastic wrap and ferment for about 40 minutes at room temperature (in summer).
8.
When the dough is twice as large as the original dough, dip your fingers in the flour and poke a hole without collapsing, and the shot is completed.
9.
Move the dough to the chopping board and press to exhaust, and let it relax in three portions for 10 minutes.
10.
Roll the three dough pieces into beef tongue-like flat pieces, and roll them up from top to bottom.
11.
Put the rolled dough into the toast mold for two rounds. In the summer and autumn season, the fermentation is still at room temperature for 50 minutes.
12.
When the mold is 8 or 9 minutes full (the lid is 9 minutes full; the lid is 8 minutes full without the lid), it can be baked in the oven for 35 minutes. (Preheat the oven at 180 degrees for 10 minutes)

Tips:
After many times of practice, we need to remind everyone: 1. Whole wheat flour must be selected with a protein content of more than 20%; 2. The dough must be soft and soft. If the dough does not feel soft enough after mixing for 10 minutes (must be some Sticky hands), 10 grams of liquid can be added as appropriate. If you stick your hands during plastic surgery, you can use a little dry powder; 3. My fermentation process is currently in summer and autumn, and the room temperature is still relatively high. If it is winter, the second hair can be placed in the oven as appropriate. 4. Different ovens have different tempers, so make appropriate adjustments according to the tempers of their own ovens.
