Cut the yak tendon into large pieces and wash them well. Soak in cold water for more than 3 hours. Change the water several times in the middle to soak in bleeding water.

In order to make the marinated beef more delicious, salt the yak tendon. This step needs to be extracted in one day.

Put the prepared seasonings into the seasoning box or sand bag and set aside.

Take a casserole to make stewed soup, add cold water, put in the seasoning box, light soy sauce, dark soy sauce, cooking wine, rock sugar.

Then add the sweet noodle sauce and bring to the lowest heat. If you like spicy food, you can also put 2 dried chillies.

At the same time, take another pot of blanching water, put the yak tendon meat directly into the pot with cold water, boil for 10 minutes, take it out and put it directly into a boiled casserole.

Put ginger slices, green onions, and salt in a casserole. Simmer for about 1 and a half hours at the minimum heat. Use chopsticks to prick them without resistance.

Place the marinated beef in the refrigerator overnight, take it out and cut it without loosening, which is more delicious.

Cut the yak tendon into thin slices, shred the cucumber, add light soy sauce, vinegar, minced garlic, beef sauce, and pour it on top of the beef. It's delicious.
Tips:
1. Soak the beef as much blood as possible to remove the fishy smell.
2. The marinated beef must be kept cool, so that the serrated slices will not loosen and taste.
3. The brine is filtered and can be reused.
