Baked Pumpkin with Salted Egg Yolk

Peel the round pumpkin, cut into thick strips and set aside (forgot to take a picture, please refer to the finished product in the following step 😄)

There happened to be salted duck eggs at home, so I didn't buy the kind of vacuum-packed egg yolks. The salted duck eggs placed at room temperature can be used directly after peeling the yolk. (If the egg yolk is vacuum-packed, it will be a bit hard, steam it for a while in advance, and then crush it with a spoon for later use)

Use a knife to cut a little bit of butter, about a spoon, add a few drops of warm water and mix it on the pumpkin strips, then sprinkle some starch and mix well, preferably by hand. (I forgot to take pictures when I stuck my hands)

Put the amount of oil that has just dipped the pumpkin strips into the pot, add the pumpkin strips when the oil is 50% hot, and fry on medium-low heat until the pumpkin skin becomes slightly crispy and the inside becomes ripe (about a minute).

Pour out most of the fried pumpkin oil, leaving only a small amount of base oil and heat it until it just smokes, turn off the heat. Put in the peeled salted egg yolk and crush it with a frying spoon. In order to master the heat, this step is done with the heat turned off. Then add an appropriate amount of sugar and stir according to personal preference.

Turn on the fire again, and heat on medium and small heat until the egg yolk becomes foamy (pictured)

Put the fried pumpkin strips into the wok or mix it lightly for a few times, turn off the heat, and be careful not to break the pumpkin, because the fried pumpkin is already ripe and is soft and easy to rot. (In the picture, I feel that I put less sugar and added a little bit, some of the white sugar did not melt when I ate it, but it feels quite sweet and layered haha)

Tips:
1. If there is no butter, no need to add it, and the taste should be good;
2. When it is difficult to master the heat, you can turn off the fire and complete some steps;
3. Add white sugar in advance and mix with the crushed egg yolks to dissolve the mash, or reduce the frequency of mixing after adding the pumpkin to avoid crushing the pumpkin
