Braised Noodles with Garlic Crawfish
1.
The lettuce is peeled off, washed, and cut into hob pieces.
2.
Pour suitable edible oil into the pot and stir-fry the lettuce until it has changed, then remove the lettuce.
3.
Pour the garlic crayfish directly into the pot, add half of the soup, and bring it to a boil.
4.
Add some light salt soy sauce.
5.
In addition to salt, although the garlic crayfish is a cooked product, it has a salty taste, but because lettuce and hand-rolled noodles are added later, it will dilute the saltiness of the original hot sauce. Therefore, it is necessary to add salt in an appropriate amount. Add side dishes to dilute the umami flavor of the original garlic crayfish.
6.
Spread the hand-rolled noodles on the surface of the crayfish evenly, so as to help the noodles mature, and there will be no situation where one side is cooked and the other is not cooked.
7.
Sprinkle the remaining garlic crayfish soup evenly on the surface of the noodles and cook for a while.
8.
Pour the lettuce into the pot, cover with the lid, turn to low heat and simmer for ten to fifteen minutes, until the noodles are cooked through, you can use chopsticks to break up the noodles, so that the noodles can be covered with the soup more evenly.
