Tips:
The best way to buy pig's trotter is the fore hooves. The fore hooves are more meaty, and some pork trotters should be dehaired by the meat seller. If you go home, you can’t chop them. The degree of ripeness should be adjusted according to your preferences. Do not smoke too much, the color will turn black if it gets too much. I don’t like to use a pressure cooker to simmer. It feels that the simmer will be more delicious and the soup will be thicker.
