Cold Catkins

The catkins, washed thoroughly, and soaked in clean water for 3 hours.

Blanch the soaked catkins in water and cool them with cold boiled water.

Grasp the water in the catkins, ball them, and serve with shredded green onions.

Add a little salt, vinegar, and sesame oil to taste.

Served with biscuits.
Tips:
The blanched catkins are soaked in clean water, and the clean water needs to be replaced once a day. You can also remove them and dry them to make stuffed buns.
