Cooking experience:
1. The blanching time of Andrographis paniculata is controlled within one minute, immediately remove the cold water to cool down quickly to prevent the color from turning yellow;
2. Add a small amount of edible oil or salt to the boiling pot when blanching the water to make the blanched Andrographis still green in color and crispy taste;
3. After blanching Andrographis paniculata, let it cool and squeeze the water gently by hand to remove some bitterness.
