Cold Noodles with Sesame Sauce

Beat the eggs.

Fried egg crust.

Cut the egg skin into thick strips and set aside.

Shred the cucumber.

Peel and shred carrots.

Blanch the carrots for 1-2 minutes, over cold water. (My family is not used to eating raw food, eating raw food can save this step.)

Boil the noodles in a pot of boiling water until they are thoroughly cooked.

Pick up and soak directly in ice water for 1 minute.

Drain the water, add 2 teaspoons of sesame oil and mix well to prevent sticking.

A pack of tahini. This tahini sauce is just right, so there is no need to adjust the thinning.

Pour the sesame paste into a bowl and stir well.

Add vinegar, soy sauce, dark soy sauce, salt, sugar and mix well. (Any vinegar will do, adjust according to your own taste. For spicy ones, put chili oil on it.)

Mince garlic, chopped green onion.

Put a little oil in the pan, and sauté the minced garlic and green onion until fragrant. (If you like to eat it raw, you can omit it, but it will have a stronger flavor after bursting.)

Put the noodles in the bowl and add the side dishes

Just mix with sesame sauce.
