My friend gave me a home-grown white jade bitter gourd, a real organic vegetable. I have eaten a lot of fried bitter gourd. I heard from friends that this white jade bitter gourd is good for cold dressing or juicing. One is too little for juicing. I haven't tried cold gourd before, so I will try it. I can’t think it is very delicious and cool. Crisp, not bitter at all.

Ingredients

Cold White Jade Bitter Gourd

1. 1 white jade bitter gourd; wash the white jade bitter gourd, cut in half, dig out the flesh, then cut into thin slices

2. Sprinkle with salt and mix well, marinate for 30 minutes; soak the marinated bitter gourd in ice water for 10-20 minutes, then squeeze the water to dry

3. Wash the small sweet peppers, remove the seeds, and shred; add the sushi vinegar and sugar, mix well

4. Mix the vinegar, sweet pepper, and bitter gourd, put it in the refrigerator for 1-2 hours.
