Put the lotus root in the pressure cooker, add brown sugar and rock sugar water, cover and cook for 40 minutes. My pressure cooker can be up to 40 minutes, and it can cook for 1 hour.

Let it cool and then cut into slices and serve (it should be completely cooled before cutting is complete. I cut it early and the rice is full, but it still sticks to the knife when cutting it. It is recommended to cut it overnight.
