Cumin Chicken Bone Fork

1. Wash the chicken bone fork and control it to dry, add appropriate amount of salt, cooking wine and ginger to marinate for 30 minutes to remove the fishy taste. Then remove the ginger slices, pour out the excess water and set aside.

2. Add more vegetable oil to the pot and add 60% oil to warm the chicken for deep-fried.

3. Deep-fried golden yellow fish out and set aside.

4. Wait for the oil in the pot to heat up again. When the oil temperature is 70% hot, pour all the chicken bones into the pot and perform the second re-fry.

5. Remove all the chicken bone forks to control the oil for later use.

6. Leave a little base oil in the pot, add an appropriate amount of cumin, and stir-fry the dried chilies over low heat to create a fragrance.

7. Add the fried chicken bone fork to join.

8. Add appropriate amount of pepper and cumin powder, chili powder (more spicy ones, I put less), if this step is light, you can add some salt. Stir it evenly.

Tips:

When seasoning, you can choose according to your own taste. You don't need to add cumin if you don't like it.
