Cut the bamboo shoots into small sections, add water to boil (to remove the pickled sourness), drain and set aside

Saute ginger & garlic in a frying pan, add chili and saute until fragrant

Add fungus shreds and stir fry

Change all the spices to boil under the fire
5.
Add 1/2 cup of water to boil, add bamboo shoots and simmer for 10 minutes

Drain the sauce slightly to complete.
Tips:
♥ The sweet and sour taste is adjusted according to personal preference and sweet and sour. The 1:1 sugar & vinegar is the most popular among everyone (I like the sourness).
♥ Step 6 If there is still a lot of sauce left, you can put the vegetables out and then change to high heat and let them dry.
