Enoki Mushroom in Tomato Sauce

Prepare the ingredients.

Remove the roots of the enoki mushrooms, wash and drain the water, wash and peel the tomatoes, and cut into cubes.

Heat oil in a pot, add minced garlic and stir fry until it is fragrant. (If you don’t like garlic, this step can be omitted)

Add the diced tomatoes and stir well, cover, and simmer for 8 minutes on medium-high heat.

Season with salt and sugar, add enoki mushrooms, cover and simmer until soft.

Open the lid and stir-fry evenly. Sprinkle chopped green onion on the plate.
